Pumpkin recipes!
Made, tested and ohh so yummy


                                     Pumpkin-Patch Brownies
  • I tripled this recipe and baked it on a 8x10 baking dish
  • Serves 15-20 people (medium size squares)
  • I used chocolate and vanilla frosting
  • The skull was freehand, i googled skull images for ideas.












Ingredients
  • 2 ounces unsweetened chocolate, chopped
  • 1/2 cup canned pure pumpkin puree
  • 2 eggs
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt 
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup flour

      Preparation

  1. Preheat oven to 325°F. Line an 8-inch square metal baking pan with foil; grease.
  2. Microwave chocolate and 2 Tbsp. water on medium for 2 minutes in a microwavable bowl; stir until smooth. Stir in pumpkin puree.
  3. With an electric mixer, beat eggs, sugars, vanilla and salt on high until thick, about 2 minutes. Add pumpkin mixture on low. Stir in cocoa and then flour until blended.
  4. Scrape batter into prepared pan. Bake until a tester comes out clean, about 30 minutes. Let cool on a rack for 1 hour.



Pumpkin Yogurt Cake

  • Got this recipe from Pinterest, it is simple & delicious. I did change it a bit. My changes written next to ingredients
  • I dusted white sugar on top just because it looked pretty. Enjoy

Prep Time: 5 minutes
Cook Time: 50 minutes                                  
Total Time: 55 minutes

A quick fall recipe.       

 

 

 

 

 

 

 

 

Ingredients:

2 cups flour
2 tsp. baking powder
1 Tbs. pumpkin pie spice (optional – I did not add and tasted great)
1/2 tsp. ground cinnamon (optional – also didn't add)
1/4 tsp. salt
1/2 cup grapeseed oil
1 cup brown sugar ( I used ½ cup)
2 eggs
1/2 cup low-fat organic vanilla yogurt (Greek yogurt would also work)
1 tsp. vanilla
1 (15-ounce) can pureed pumpkin

Directions:

  • Preheat oven to 325 degrees. Grease a 9x9 baking dish.
  • In a small bowl, combine the flour, baking powder, (pumpkin pie spice, cinnamon- optional) and salt and mix well.
  • In a large bowl, whisk the grapeseed oil and sugar until combined. Add the eggs, yogurt, vanilla and pumpkin and mix until fully incorporated. Add in the flour mixture and stir to incorporate the dry ingredients.
  • Pour the batter into the prepared pan and bake for 40-50 minutes until a toothpick inserted comes out clean.

My front entrance pumpkins.
Easy DIY, just paint a solid color than add tape for stripes (easier) and opposite paint for circles. I added thick black and thin silver ribbon to the top. All supplies bought at the dollar store. This is a fun project to do with your kids.
