A lemon a day...
I drink my warm glass of water with fresh squeezed lemon juice ( about 2 tblsp) every morning. I feel cleansed and energized, perfect way to start my morning.

Everyone should acquire some time for themselves. Let it be 5, 10 or 20 minutes to relax, laugh,read a book, watch tv, dance, exercise, or take a bath.
Try this everyday, take time, just be!!!!
Fresh, fulfilling, fruit salad with yogurt cranberry juice
Great snack
Ingredients
1 cup of blueberries
1 cup raspberries
1 cup blackberries
1 cup strawberries
1 granny green apple
2 tangerines
1/2 grapefruit
1 banana
1/2 cup of cranberry juice
3-4 spoons of 0%liberte Greek yogurt , vanilla flavor
Directions
Cut fruits as desired to a fruit bowl. Add the cranberry juice and Greek yogurt and mix.
* you can add 1/2 cup of orange juice as well, or 1cup of half juice and half water.
Taco fun for the whole family
Chicken tacos
Ingredients
1package of skinless chicken thighs
1head romaine lettuce
2 stalks of celery
Mozzarella cheese or goat cheese
Plain hummus
1% sour cream package
1 package of taco seasoning
Soft and hard tacos
Note- you can purchase a taco dinner package which comes with tacos, taco sauce and seasoning.
Preparation
Cook chicken
Cut the chicken thighs to thin slice.
In a frying pan add a bit of olive oil, about 2 spoons, and 3 mashed garlic cloves. Let garlic lightly brown. Add chicken, season with a pinch of salt and pepper, and fry for about 5 minutes. Sprinkle talco seasoning powder and let cook for another 10 minutes.
Chop romaine lettuce, celery and add to a serving dish.
Display cheeses, tomato sauce and hummus on individual serving bowls.
*For a healthier taco, use the goat cheese and hummus rather than mozzarella cheese and sour cream.
Now have fun and create your own savory taco. Great for the whole family. Super great for kids, they will love to put there own taco together.

Vegetable, quinoa soup. Something to warm you up for this cold weather
Ingredients
2 cups of quinoa
A bunch of Swiss chard
A bunch of red Swiss chard
One bag of baby bok choy
2 heads of broccoli
Half head of cauliflower
1 cup of spinach
2 stalks if celery
One small whole garlic head
One onion
4 skinless chicken thighs
Salt and pepper
A pinch of paprika
2 tblsp of tomato paste
Directions
Note: Leave broccoli, cawliflower, celery and spinach aside. Chop the broccoli and cawliflower up, thinly slice the stems and celery and put aside.
In a pot bring water to a boil, add garlic, onion, collard greens, bok choy, some broccoli and cawliflower and chicken thighs. Let cook for about 15 minutes.
Once cooked, remove chicken to a plate. Pure the veggies in the soup.
Slice chicken into thin pieces
Add 2 cups of quinoa.
Add chicken to pured soup and all your chopped veggies and spinach. Let cook for another 10-15 minutes until quinoa fully cooked.
Warm and delicious. Perfect for cold weather. Enjoy...

My super quick, easy lunch!
Baby collard greens scrambled eggs
Filling, energizing and so yummy :-)
Olive oil
A cup of mixed baby collard greens
2 eggs
Garlic, salt and pepper to taste
Recipe
1. In a skillet heat a spoon of olive oil
2. Add a pint of powder garlic
3. Add baby collard greens and fry at low heat for 2 minutes
3. Break eggs into skillet, season with salt and pepper, stir, cook for another 3 minutes and voilà.

Happy new year everyone. I want to begin this new year with a super easy and delicious meal
Fried tuna steak in avocado oil.
Season tuna with garlic powder, salt, pepper and pepper flakes on both sides. Sauté on both sides until golden, about 4 minutes on each side.
White rice - slow cooker, I usually sauté a garlic clove in olive oil than add a cube of chicken stock, add rice, stir and add water.
Salad- mix any greens you like, season with salt and pepper, olive oil and vinegar.
Enjoy, the tuna is super tender and so juicy.
I paired this dish with a Pinot noir from Argentina.
